ref(sourcegraph): exclude more directories from backup
I don't need to backup the observability data for sourcegraph. I also don't need to backup the cache. These files change a lot and are about ~300M of data every day, which creates a lot of churn for our backup. All I need if I restore a backup is the content of the database and the indexes.
